Generating more structurally varied caves is one of the Minecraft PE 1.17 highlights. Like the new blocks and items from 1.17 (Cave and Cliffs Addon), this game add-on will affect the world underground. Now the ravines, along with the new caves, will expand, receiving additional landscape blocks and changing their shape. In a way, this is an attempt to do something similar to what we will see this summer.

These are only the first versions of the addon and many things do not look like it is shown in the Minecraft 1.17 trailer. There are no long and winding caves with geodes and underground plants, but somehow the addon really changes the vanilla generation by adding ice caves and underground lakes.
And as always, you can learn more about the list of features of MCPE 1.17 called the Caves & Cliffs Update. This big event is scheduled for the summer of 2021 but there are already beta versions that have received some of the new features. For example, the latest version 1.16.210.58 features copper and lightning rod.
