Not as a starting point, but head there to these coordinates (-288, 223, -467) to find yourself next to the mountain, the hero of this MCBE seed. It's not that big compared to other mountain seeds for Minecraft Bedrock 1.21, but it's big enough to be called large.
One side of the mountain is occupied by a village and its inhabitants are doing quite well. Start with a plan to place your castle there - the place is perfect for it.
Further, inspecting your possessions in the kingdom you will find plains surrounded by cherry forest. This territory is enough for auxiliary buildings, expansion of the village and small peasant houses.
