Cow Expansion follows this path and works with cows to bring new types into Minecraft PE. In fact, this tiny addon only slightly modifies the game, essentially leaving everything else the same and without interfering with script mechanics.

All types of new cows are not fundamentally different from vanilla one. Nibbling grass and mooing, as well as their neutral status, are what describe these animals best.
But there are some differences related to habitat. So, they are all clearly distributed between biomes.
